LIVE! From The Culinary Center Of Kansas City A Roman Trattoria Class


We are LIVE! from the Culinary Center today and we are doing a SOLD OUT HANDS ON CLASS! I am cooking traditional Roman Trattoria dishes such as Pollo Saltimbocco, Roman Flatbread, Spaghetti alla Carbonara (my favorite pasta). We are going to end the evening around the table - Trattoria Style - everyone enjoying dinner and my perfect ending Tartuffo! We will be talking about the history of the Eternal City and I am anxious to see 30 students make Carbonarra for the first time.

This dessert was invented in Rome at the world famous Tre Scallini Restaurant. I ate here MANY times with my parents and I still hit this place EVERYTIME I go back to Rome! It is located in the Piazza Navona, a short walk from the Campo di Fiore. You can take your tartufo and stroll around the fountains in what many regard as Rome's most evocative piazza, or you can sit at one of the tables outside Tre Scalini and do what everybody else is doing - people-watch!

World famous Roman Dessert

2 cups chocolate ice cream
8 Maraschino Cherries
1 cup vanilla ice cream
1 1/2 cups chocolate shavings

With a small ice cream scoop, make walnut-sized balls of the vanilla ice cream. Place a cherry into the center of each ball. Freeze. With a larger ice cream scoop, dig out flat globs of chocolate ice cream and pack it around the vanilla ice cream ball, covering completely. Freeze for 30 minutes. Roll in chocolate shavings and keep frozen. Serve with chocolate syrup and freshly whipped cream.
